Sheet Pan Cajun Chicken and Peppers

Serves: Four | Prep: 15 min | Cook: 25 min

Ingredients:

Sheet Pan Cajun Chicken and Peppers:
1.5 lbs chicken breasts, boneless, skinless and cut into strips
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 large onion, cut into wedges
4 garlic cloves, minced
1 hot chili pepper, minced
2 tsp paprika
1 tsp garlic powder
1 tsp salt
1/2 tsp onion powder
1/2 tsp dried oregano
1/2 tsp pepper
1/4 tsp cayenne pepper
3 Tbsp olive oil
1/4 cup fresh cilantro, roughly chopped
Limes

Directions:
Preheat oven 425F/220C. Lightly oil a baking tray or line with baking paper.

Place chicken, peppers, onions, garlic, and hot chili on to the prepared tray.

In a small bowl mix paprika, garlic powder, salt, onion powder, dried oregano, pepper, and cayenne pepper together. Sprinkle mixture over chicken and vegetables, coat well. Drizzle with olive oil and toss to coat. Spread into an even layer, keeping the chicken from overlapping. Bake for 25-30 minutes, until the chicken is completely cooked through.

Squeeze lime juice over the chicken and vegetables and sprinkle with cilantro.

Serve with Wraps or with Yellow Turmeric Rice.
