Powdered Sugar Coated Doughnuts

Serves: Makes Twelve | Prep: 15 min | Cook: 7 min

Ingredients:

Powdered Sugar Coated Doughnuts:
2 cups all-purpose flour
1/2 cup sugar
2 tsp baking powder
1 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
2 eggs
3/4 cup buttermilk
2 Tbsp vegetable oil
1 tsp vanilla extract
2 Tbsp butter, melted
1 1/2 cups powdered/icing sugar

Directions:
Preheat oven 425F/220C. Grease a doughnut tray.  

In a large bowl mix flour, sugar, baking powder, salt, cinnamon, and nutmeg together.

In a jug whisk eggs, buttermilk, vegetable oil, and vanilla extract together. Add the wet mixture into the dry ingredients. Stir, just until combined. Fill each doughnut mold about 2/3 full. Bake, 7-9 minutes, until golden and the top of the doughnuts spring back when touched. While warm brush each doughnut with melted butter and immediately place into the powdered sugar, coating the doughnut completely. Place onto a wire cooling rack and let cool completely.

** A muffin tin can be used. Just decrease oven temp to 350F/180C and bake 15-18 minutes, until a toothpick in the center of the muffin comes out clean.
