Ham and Cheese Pancakes

Serves: Four | Prep: 15 min | Cook: 15 min

Ingredients:

Ham and Cheese Pancakes:
1/2 cup all-purpose flour
3/4 cup whole milk
1 egg
1 1/2 Tbsp butter, melted, plus more for cooking
1 cup ham, chopped
1 cup cheddar cheese, shredded
2-3 Tbsp fresh chives, finely chopped
Coarse black pepper

Directions:
In a bowl whisk milk, egg, and butter. Add flour and whisk, until smooth. Let rest for 10 minutes.

Melt about 1 tsp butter in a 10-inch skillet over medium high heat. Pour about 1/4 cup of the batter to the hot skillet. Swirl to coat the pan and cook for 1-2 minutes. Flip and cook 30-60 seconds more. Add a 1/4 cup chopped ham and 1/4 cup shredded cheese on top of the pancake. Fold pancake in half and then fold in half again. Transfer to a plate. Garnish with fresh chives and freshly ground black pepper.
