Plum Marzipan Crostata

Dough:
1 1/2 cups all-purpose flour
2 Tbsp sugar
1 tsp lemon zest
1/2 tsp salt
1/2 cup cold butter, cubed
1/4 cup cold water
Filling:
6 ripe plums, halved and stoned
1/2 cup marzipan, diced small
1/4 cup apricot jam
Directions:
In a food processor, combine the flour, sugar, zest, and salt. Pulse a few times to mix. Add the butter and pulse until the mixture looks like coarse crumbs.
With the motor running, slowly add the cold water through the feed tube. Process just until the dough begins to come together. Turn the dough out onto a floured surface, shape it into a disk, wrap in plastic wrap, and refrigerate until firm, at least 1 hour.
Preheat the oven to 400°F/200°C. Line a baking tray with parchment paper.
On a floured surface, roll out the chilled dough into a 12-inch circle. Transfer it to the prepared tray. Spread the marzipan over the dough, then arrange the plums (cut side up) on top, leaving a 1 1/2-inch border. Gently fold the edges of the dough over the plums, pleating as you go, and pinch any cracks to seal. Dollop the apricot jam over the fruit and spread it out evenly.
Bake for 20–30 minutes, until the crust is golden and the plums are tender. Let rest for 10 minutes before serving.
Serve with Vanilla Custard, Three Ingredient Vanilla Ice Cream, and Vanilla Bean Whipped Cream.
