Fresh Tomato Pasta Salad

Ingredients:
Fresh Toamto Pasta Salad:
1 lb pasta
2 lbs ripe vine tomatoes, chopped
1/2 cup extra virgin olive oil
2 garlic cloves, minced
1/2 cup fresh basil, chopped
2 Tbsp fresh parsley, chopped
1 1/2 tsp salt
1/2 tsp pepper
1/4 tsp red pepper flake
1 jar about 1 cup marinated artichoke hearts, drained and roughly chopped
1/2 cup kalamata olives, pitted and roughly chopped
1 tsp lemon zest
1 lemon, juiced
1 cup parmesan cheese, grated
Directions:
In a large bowl, combine the tomatoes, olive oil, parsley, basil, garlic, salt, pepper, and red pepper flakes. Mix well and let sit at room temperature for 30 minutes to 3 hours to allow the flavors to develop.
When ready to serve, cook the pasta according to the package directions until al dente.
Drain the pasta and, while still warm, add it to the bowl with the marinated tomatoes. Stir in the olives, artichoke hearts, lemon zest, lemon juice, and Parmesan cheese. Toss everything together until well combined.
Garnish with extra fresh basil before serving.
