Plum and Marzipan Puff Pastry Pie

Serves: Four | Prep: 15 min | Cook: 30 min

Ingredients:

Plum and Marzipan Puff Pastry Pie:
1 puff pastry, thawed
1 lb plums, stoned and quartered
1/3 cup light brown sugar
2 Tbsp brandy
2 tsp cornstarch/cornflour
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup marzipan, finely cubed
1 egg
1 Tbsp coarse brown sugar

Directions:
Preheat oven 450F/220C.

In a bowl mix plums, sugar, brandy, cornstarch, cinnamon, and nutmeg together. Transfer mixture to a 10-inch cast iron skillet or baking dish. Dollop chopped marzipan evenly over the plum mixture.

Make egg wash by whisking the egg with 1 Tbsp water.

On a lightly floured surface, roll out the puff pastry and cut larger than the size of the skillet. The pastry needs to cover the top and then gently press down the edges into the skillet around the plums. Before placing the edges down brush all of the puff pastry with the egg wash. Next, sprinkle the top with the coarse brown sugar and bake for 30-35 minutes, until golden brown and crisp.

Serve with Vanilla Custard, Three Ingredient Vanilla Ice Cream, and Vanilla Bean Whipped Cream.
