Grilled Chicken
Serves: Four | Prep: 3hrs, 10 min | Cook: 10 min
Ingredients:
Grilled Chicken:
2 lbs chicken breasts, boneless and skinless
1/3 cup olive oil
4 garlic cloves, minced
2 tsp Italian Seasoning
1 tsp lemon zest
1 tsp salt
1/2 tsp pepper
Directions:
Place chicken breast onto a cutting board, pound chicken with a mallet, until flattened about 1/2-inch thick or cut cutlets thin lengthwise. Repeat with all the remaining chicken.
In a large casserole dish, large enough to fit the chicken flat. Whisk the oil, garlic, Italian Seasoning, lemon zest, salt, and pepper together. Add the chicken and coat well in the marinade. Cover and refrigerate for at least three hours to overnight.
Bring chicken to room temperature. Heat grill/barbecue to medium high heat. Remove chicken from marinade, discard marinade and grill/barbeque for 4-5 minutes on each side.
