Slow Cooker Mashed Potatoes

Serves: Eight | Prep: 20 min | Cook: 4 hrs

Ingredients:

Slow Cooker Mashed Potatoes:
4 lbs potatoes, peeled and cubed
1 cup chicken or vegetable stock
3/4 cup butter, cubed
1/4 cup cream cheese
1/2 cup heavy/double cream
1 1/2 tsp salt
1/2 tsp pepper

Directions:
In a large slow cooker add potatoes, stock and cubed butter. Cook on high for 4-5 hours, until potatoes are fork tender.

Add cream cheese, cream, salt, and pepper. Mash with a potato masher or electric mixer until smooth.

Serve warm. The potatoes can stay in the slow cooker on warm for up to two additional hours. If the potatoes start to dry out add more milk or cream.
