Roasted Butternut Squash Pizza with Blue Cheese and Walnuts
Serves: one pizza | Prep: 15 min | Cook: 30 min
Ingredients:
Roasted Butternut Squash Pizza with Blue Cheese and Walnuts:
One Pizza Dough
1/2 butternut squash, peeled, seeded and thinly sliced
4 fresh thyme sprigs
2 Tbsp olive oil
1/2 tsp salt
1/4 tsp pepper
1 1/2 cups mozzarella cheese, shredded
6 slices prosciutto
1/2 cup blue cheese, crumbled
1/4 cup raw walnuts, roughly chopped
Directions:
Preheat oven 450F/220C. Line a baking tray with baking paper.
Place sliced butternut squash on to the prepared tray. Drizzle with oil, salt, and pepper. Mix to coat and place fresh thyme sprigs on top. Bake, 15-20 minutes, until tender. Discard thyme sprigs.
Increase oven temperature 500F/260C. Line the back of a baking tray with baking paper.
Roll out pizza dough and place onto the prepared baking tray. Cover dough with mozzarella, leaving a 1-inch boarder. Top with prosciutto, roasted butternut squash, discarding thyme. Bake, 10-15 minutes, until golden and cheese is melted. Remove from oven, sprinkle with blue cheese and walnuts.
