Sheet Pan Honey Garlic Shrimp and Pineapple

Ingredients:
Sheet Pan Honey Garlic Shrimp and Pineapple:
1 lb raw Shrimp, peeled and deveined
4 garlic cloves, minced
1 jalapeno pepper, minced
2 Tbsp olive oil, divivded
1 Tbsp soy sauce
1 Tbsp honey
1/2 tsp salt
1/2 tsp pepper
2 cups Fresh Pineapple, Cubed
1 red bell pepper, cubed
1 red onion, cubed
1 lime, juiced
2-4 Tbsp fresh cilantro, chopped
Directions:
Preheat the oven to 425F/220C.
Toss the shrimp with garlic, jalapeƱo, 1 Tbsp olive oil, soy sauce, honey, salt, and pepper. Arrange shrimp on one side of the baking tray.
On the other side of a baking tray, arrange the pineapple, bell pepper, and red onion. Drizzle with the remaining 1 Tbsp olive oil and toss to coat.
Bake for 8-10 minutes, or until the shrimp are cooked through. Switch the oven to broil and broil everything for 1-2 minutes, until the vegetables and pineapple start to char.
Once done, toss everything together, squeeze fresh lime juice over the top, and sprinkle with chopped cilantro.
Serve with Rice, tortillas, and Cilantro Lime Sauce.
