Pan Fried Okra

Serves: Four | Prep: 1 hr, 45 min | Cook: 10 min

Ingredients:

Pan Fried Okra:
1 lb okra, 1/2-inch thick slice
2 eggs
1/3 cup buttermilk
1 1/2 cups cornmeal/polenta
3/4 cup all-purpose flour
1 1/2 tsp garlic powder
1 tsp salt
1/2 tsp pepper
1/2 cup vegetable/frying oil

Directions:
In a bowl, whisk together the eggs and buttermilk. Add the sliced okra and toss to coat evenly. Let the mixture rest in the refrigerator for at least 1 hour, stirring occasionally to ensure every piece is well coated.

In another bowl mix cornmeal, flour, garlic powder, salt, and pepper together. Add the coated and soaked into the cornmeal mixture, in small batches, making sure to coat each piece well. Next, place the coated okra onto a baking tray and place in the freezer for at least 30 minutes before frying.

Heat oil in a cast iron skillet over medium high heat. Carefully place cold coated okra into the hot oil, stirring continuously, until golden brown. Drain on paper towel. Serve with Duck Sauce.
