Buttered Tomato Basil Chicken

Serves: Four | Prep: 15 min | Cook: 20 min

Ingredients:

Buttered Tomato Basil Chicken:
1.5 lbs chicken breasts, boneless, skinless, cut in half horizontally
1 1/2 tsp salt, divided
1 tsp dried oregano
1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp pepper
1/2 tsp red pepper flake
5 Tbsp butter, divided
2 shallots, finely chopped
4 garlic cloves, minced
2 Tbsp tomato paste
2 large tomatoes, chopped
1 Tbsp balsamic vinegar
1 14 oz can chopped tomatoes
1 cup fresh basil
1/3 cup parmesan cheese
Balsamic Glaze, optional

Directions:
Heat 3 Tbsp butter in a large skillet over medium high heat. Season chicken with 1 tsp salt, dried oregano, paprika, onion powder, pepper, and red pepper flake. Once the skillet is hot, add chicken cook for 3-5 minutes per side. Remove chicken from skillet, set aside.

Add the remaining 2 Tbsp butter to the skillet. Add shallots and cook for 1-2 minutes, until soft. Add garlic and cook for 30 seconds more. Add tomato paste, freshly chopped tomatoes, balsamic vinegar, and the remaining 1/2 tsp salt. Cook and stir for 2 minutes. Add canned tomatoes, 1/2 cup water basil, and chicken along with all it’s juices back to the skillet. Reduce heat and simmer for 10-12 minutes, until chicken is cooked through and sauce thickens. Stir in parmesan cheese and top with fresh basil, parmesan shavings, and a drizzle of balsamic glaze.
