Pumpkin Shaped Cheese Spread

Ingredients:

Pumpkin Shaped Cheese Spread:
8 oz cream cheese, room temperature
8 oz chive and onion cream cheese, room temperature
2 Tbsp fresh chives, minced
1/4 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper
2 cups red cheddar cheese, grated
1 bell pepper

Directions:
In a mixing bowl, combine the cream cheese, chives, garlic powder, salt, pepper, and 1 cup of cheddar cheese. Stir until well blended.

Lay out a double layer of cling film on your workspace, enough to wrap the cheese mixture. Sprinkle 1/2 cup of the shredded cheddar in the center of the cling film.

Place the cream cheese mixture on top of the cheddar on the cling film. Wrap the cling film around the cheese mixture loosely to form a ball. Unwrap and sprinkle the remaining cheddar over the top and sides. Wrap it up again in the cling film, shaping it into a ball.

Use thick rubber bands around the wrapped cheese ball to make slight indentations, creating a pumpkin shape. Refrigerate for at least 2 hours to let it firm up.

Remove the cheese ball from the fridge. Cut off the rubber bands and gently take off the cling film. Place the cheese pumpkin on a serving dish. Use the bell pepper stem as the "pumpkin stem." Slice the rest of the bell pepper for dipping, and serve with crackers.
