Kale and Smoked Bacon
Serves: Four | Prep: 20 min | Cook: 24 min
Ingredients:
Pancetta Sauteed Cabbage:
1 lb, about 6 cups kale
1 Tbsp olive oil
1 cup thick smoked bacon, cubed
1 onion, finely chopped
3 garlic cloves, minced
1/2 cup chicken stock
1/2 tsp sugar
1/2 tsp salt
1/2 tsp pepper
Directions:
Heat oil in a large pot over medium high heat. Add cubed bacon and cook for 5-7 minutes, until brown and crisp. Add onion and garlic. Stir and cook for 4-6 minutes, until soft. Add stock and stir to release brown bits at the bottom of the pot. Add sugar, salt, and pepper. Stir in kale a little at a time, until all is in the pot. Decrease heat to low, cover and cook for 10-12 minutes, until wilted.
