Dark Chocolate Cherry Cookies
Serves: Makes Two Dozen | Prep: 15 min | Cook: 12 min
Ingredients:
Dark Chocolate Cherry Cookies:
2 cups all-purpose flour
1/2 cup cocoa powder
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup butter, room temperature
1 cup dark brown sugar
1/4 cup sugar
2 eggs
2 tsp vanilla extract
1 cup dark chocolate chips
1 cup candied/glacé cherries, roughly chopped
Directions:
Preheat oven 350F/180C. Line two baking trays with baking paper.
In a bowl mix flour, cocoa powder, baking powder, baking soda and salt together.
In a mixer with a paddle attachment cream butter and sugars together. Scrapping down the bowl as needed. Add eggs and vanilla. Add dry ingredients and mix, until combined. Add dark choclate chips and cherries, stir just until mixed.
Using an ice cream scoop, drop the mixture onto the prepared trays, leaving at least one inch between cookies. Bake, 12-15 minutes. Let cool on the trays slightly before transferring to a wire rack.
