Baked Pears with Blue Cheese, Walnuts and Honey

Serves: Six | Prep: 15 min | Cook: 15 min

Ingredients:

Baked Pears with Blue Cheese, Walnuts and Honey:
6 large ripe pears
1 1/2 Tbsp olive oil
1/2 tsp pepper
2 tsp light brown sugar
1/2 cup blue cheese, crumbled
2 Tbsp honey
1 tsp thyme, minced
1/4 cup toasted walnuts, roughly chopped

Directions:
Preheat oven 375F/190C. Line a baking tray with baking paper.

Cut each pear in half lengthwise. Scoop out core and some flesh to make a well in the pears. Place pears cut side up onto the prepared tray. Drizzle with olive oil, pepper, and light brown sugar. Place crumbled blue cheese into each well. Bake for 15-20 minutes, until pears are tender and the blue cheese has slightly melted.

Meanwhile, in a dry skillet over medium low heat add walnuts, toast, 2-3 minutes, stirring occasionally, until golden brown.

Remove pears from oven and drizzle with honey, sprinkle with fresh thyme and toasted walnuts. Serve warm.
