Salami Pasta Bake

Ingredients:
Salami Pasta Bake:
1 Tbsp olive oil or oil from sundried tomatoes
1 onion, chopped
1 zucchini, cut in half lengthwise and thinly sliced
3 garlic cloves, minced
1 tsp paprika
1 tsp dried oregano
1 tsp dried basil
1 tsp dried parsley
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp red pepper flake
2 Tbsp tomato paste
1 14oz tin chopped tomatoes
2 cups chicken stock
12oz dry penne pasta
1/2 cup sundried tomatoes, drained and chopped
1/2 cup black olives, halved
1/4 lb salami (about 10 slices), sliced thin in strips
1/4 cup parmesan cheese, grated
1/2 cup cheddar cheese, shredded
1 cup mozzarella cheese, shredded
1 Tbsp fresh basil, chopped
Directions:
Preheat oven 400F/200C.
In a large skillet with a lid, heat oil over medium high heat. Add onion and zucchini, cook, 5-7 minutes, until soft. Add garlic, paprika, oregano, basil, parsley, salt, pepper, garlic powder, and red chili flake. Cook, 30 seconds. Stir in tomato paste, cook for another 30 seconds. Add chopped tomatoes, dry pasta, stock, sundried tomatoes, olives, and salami. Stir and bring to the boil. Remove from heat and stir in parmesan cheese. Cover with a lid and bake, 30 minutes. Remove lid. Top with cheddar and mozzarella cheese and bake for another 12-15 minutes, until bubbling and golden. Top with fresh basil before serving.
