Pickled Onions

Serves: Makes one cup | Prep: 10 min | Cook: 3 min

Ingredients:

Pickled Onions:
1 cup red onion, thinly sliced
1/2 cup white vinegar
1/4 cup apple cider vinegar
1/4 cup water
1/8-1/4 cup sugar (depending on taste)
1 tsp whole black peppercorn
1 garlic clove, smashed

Directions:
In a saucepan add vinegars, water, and sugar. Heat over medium low heat, stir, until the sugar dissolves. Remove from heat and let cool.

To a clean jar add garlic and peppercorns. Fill with onions and pour over the sugar water.

Let rest in the refrigerator for at least one hour before using. Onions will last in the refrigerator, 2-3 weeks.
