Chicken with Grapes

Ingredients:
Chicken with Grapes:
4 chicken breasts, bone in, skin on
1 1/2 tsp salt, divided
3/4 tsp pepper, divided
3 Tbsp butter, divided
2 Tbsp olive oil
1 red onion, sliced
2 garlic cloves, minced
1 Tbsp fresh thyme, minced
2 tsp fresh rosemary, minced
1/4 cup balsamic vinegar
1/4 cup white wine
3 cups assorted seedless grapes
Directions:
Preheat oven 350F/180C.
Pat dry both sides of the four chicken breasts with paper towel. Season chicken with 1 tsp salt and 1/2 tsp pepper.
Melt 2 Tbsp butter and olive oil together in an ovenproof skillet over medium high heat. Add seasoned chicken. Cook, 3-5 minutes per side. Transfer chicken to a plate.
Lower heat to medium, add onion, cook until soft 2-3 minutes. Add garlic, rosemary, thyme, white wine, balsamic vinegar, grapes, the remaining 1/2 tsp salt, and 1/4 tsp pepper. Cook , stirring occasionally, 3-5 minutes more.
Swirl in the remaining 1 Tbsp butter. Return chicken and juices to the skillet and cook in the preheated oven, 25-30 minutes, until the chicken is cooked through.
Drizzle with a little olive oil before serving.
