Balsamic Cranberry Roast Beef

Serves: Four | Prep: 15 min | Cook: 1 hr, 15 min

Ingredients:

Balsamic Cranberry Roast Beef:
4 lbs top round roast
3 tsp salt
1 1/2 tsp pepper
2 Tbsp olive oil
2 Tbsp butter
3 garlic cloves, minced
1 cup beef stock
1/2 cup balsamic vinegar
1/4 cup Cranberry Sauce
2 Tbsp worcestershire sauce
1 1/2 Tbsp light brown sugar
1/2 tsp onion powder
1/2 tsp red pepper flake
1 1/2 cups fresh cranberries
4-6 thyme sprigs

Directions:
Remove beef from the refrigerator at least 30 minutes prior to cooking.

Preheat oven 350F/180C.

Season beef with salt and pepper.

To a large cast iron skillet, melt butter and oil over medium high heat. Sear beef on all sides, 3 minutes each side. Do not touch the beef while searing. Remove beef and set aside. Turn off heat. Whisk in beef stock, balsamic vinegar, cranberry sauce, worcestershire sauce, brown sugar, onion powder, and red pepper flake. Stir in fresh cranberries and thyme sprigs. Place beef on top, along with juices and roast for approximately 1 hour, until an internal temperature reaches 145F/63C for medium. While roasting baste beef every 20-25 minutes. Let rest for 10-15 minutes, before slicing. Place sliced beef back into the skillet and serve on top of the balsamic cranberry sauce.
